Ten wings, ten sauces, the peppers behind each one.

Season 31 of Hot Ones runs ten sauces, from Mexicali (2 / 10) to The Last Dab Thermageddon (11 / 10).
Each step is the seller's 1 to 10 score; the last wing goes past the top.

The score is the seller's own 1 to 10 scale; it ranks the bottles and does not convert to Scoville.
Wings 1–3
Warm-up
Jalapeño, cayenne, Hatch and a yellow Scotch bonnet, all at 2 or 3 out of 10.2
Wings 4–6
Middle
Habanero, Fresno, chipotle and red Thai chili; wing 5 is the one bottle with a Scoville figure.2
Wings 7–10
The last four
Carolina Reaper in wing 7 and Pepper X in wing 10; wings 8 and 9 do not name their peppers.2
Season 31 gives you ten sauces, one per wing, and the official Hot Ones store sells them as the Season 31 10-Pack1. The order and peppers you see in the heat ladder at the top come from HEATONIST, the show's official sauce partner2.
The seller's score never drops from one wing to the next, and the last wing goes past the scale at 11 out of 10.2 Lineups change every season, so we check the ladder against the partner listing each quarter.
If you buy the pack, you get ten bottles of 5 oz or 5 fl oz each, tasting notes with a heat guide, and no wings: the listing tells you to fry your own or support a local wing spot2. Read the labels and you will find a few hold more than the ladder shows. Beach Bonnet adds ground cayenne and guajillo powder to its yellow Scotch bonnet, and JANG adds Korean chili paste to its fermented mash2.
In four stretches, and you feel the biggest jump between the third and the fourth. The diagram follows the ten wings in the order you eat them, with the peppers each stretch names.
Most of your night sits in the first six wings, where the peppers stay at or below habanero heat. The last four carry the risk, so that is where you slow down, take a sip of milk and decide wing by wing.
Mostly you cannot know, at least from public pages. The sellers rate nine of the ten on a 1–10 scale and publish an SHU figure for just one.
A 1–10 score does not convert to Scoville; it only tells you how the ten bottles rank against each other. Ed Currie, founder of Puckerbutt Pepper Company, grew Pepper X and unveiled it on an episode of Hot Ones3, and his Puckerbutt label also holds wing 9 this season2.
The bottles give you no numbers, but most of the peppers they list do. Here are the named peppers from wings 1 to 10 on one log heat axis, from the jalapeño in wings 1 and 2 to Pepper X in wing 102.

A pepper's rating does not tell you the sauce's rating. Los Calientes Rojo starts from orange habanero, a pepper UF/IFAS rates at 100,000 to 350,000 SHU4, yet the bottle lists 49,000 SHU2. Vinegar, salt and the other ingredients dilute the pods, so read this chart as the ceiling for each wing, not its score.
Howtown, an explainer channel, made this 2024 video on the truth about the Hot Ones sauces, so you can hear a second take on how the bottles are made and rated; lineups change every season, so use it for background and this page for the current ladder.
The Last Dab Thermageddon, wing 10 this season. The Hot Ones store calls it the new hottest sauce on the show7, and HEATONIST scores it 11 out of 102.
Your answer sits on the label. The mash holds Pepper X, Carolina Reaper, Red Scorpion and Pepper Y with vinegar, and a second layer of pepper powder adds more Pepper X, Reaper and Scorpion8. The bottle lists a serving as 5 mL, with 30 servings per bottle8. On a wing you will likely use far less than a full serving.
The store also sells a stronger-sounding cousin, The Last Dab Xperience, which it describes as made with 91 % Pepper X7. Neither bottle gives you a Scoville figure.
Three house lines. The Hot Ones FAQ says each season brings a new lineup, but The Classic, Los Calientes and The Last Dab stay as constants7. In Season 31 you meet Los Calientes Rojo at wing 5 and The Last Dab at wing 10, while wing 2 goes to a House Sauce instead of The Classic2.
If you compare two of those house bottles, The Classic and Los Calientes Rojo, you find them at opposite ends of the house range.
The Classic
On your tongue, The Classic reads like a short Louisiana-style list; Los Calientes Rojo reads like a salsa with fruit in it. If you build a fridge shelf around the show, those two cover a lot of ground at 2 and 5 on the scale.
The show releases a new season of interviews every January, May and September, hosted by co-creator Sean Evans7. That pace is why this page shows you a last-verified date and why we recheck it every quarter.
HEATONIST keeps a shop page for every season from 1 to 28 plus the current one11. Our season-by-season table will gather those lineups in one grid, and a separate page covers running the challenge at home.
Read the peppers column before you read the heat column. Wing 7 names Carolina Reaper, wing 10 names Pepper X and Carolina Reaper, and wings 8 and 9 do not name their peppers at all2, so treat the last four as unknowns and save them for the end of the night.
Set the table
Ten wings per person, the ten bottles in wing order and a glass of milk, which the Hot Ones store itself suggests. Shake each bottle first, since some separation is normal.7
Dab, do not pour
Start each wing with a thin coat. Thermageddon's own serving is 5 mL, and a wing needs far less than that.8
Sip milk between the hot ones
In a 72-person test, whole and skim milk cut capsaicin burn the most of seven drinks.12
Stop when your body says so
Nausea, vomiting and stomach pain are the signs of too much hot pepper. You can end the night at wing 6 and still have eaten most of the lineup.13
If the last three wings sound like more than a dare, the pepper challenge guide covers what super-hot peppers do to the body and when you should stop.
